Fattoria Mancini Impero Blanc de Pinot Noir Marche Igt 2024

Impero è il vino simbolo della cantina, un Blanc de Pinot Noir unico nel suo genere, frutto di oltre cinquant’anni di esperienza nella vinificazione in bianco del Pinot Nero. Nato con la vendemmia 1998 e subito diventato un riferimento aziendale, rappresenta la volontà della famiglia di creare un grande bianco utilizzando esclusivamente le varietà storicamente coltivate nei loro vigneti.

Le uve provengono dalla Vigna di Fontebocale, situata nel cuore del Parco Naturale del Monte San Bartolo, nel Comune di Pesaro. Un’area di altissimo pregio, a un solo chilometro dal mare, caratterizzata da altitudini tra 100 e 150 metri, terreni limosi, calcarei e ricchi di sabbia, sempre ventilati e capaci di donare freschezza, sapidità e precisione aromatica ai vini.

La vendemmia avviene tra fine agosto e inizio settembre, interamente a mano, con selezione delle uve in cassette da 15 kg. Un aspetto distintivo della produzione è il raffreddamento immediato delle cassette in vigna, tramite cella frigo mobile, che permette di portare i grappoli a circa 9°C prima della pressatura, preservando integrità e finezza aromatica.

La vinificazione è condotta con pressatura soffice di uve intere non diraspate, estraendo solo il mosto fiore, pari al 50% del peso delle uve. Il mosto viene decantato senza chiarificanti e fermentato in barrique francesi a temperatura controllata. La malolattica è completata, contribuendo alla struttura e alla setosità del vino.

L’affinamento prosegue per 12 mesi in barrique da 228 litri (20% nuove, 40% secondo passaggio, 40% terzo), con batonage sulle fecce fini, seguito da microfiltrazione prima dell’imbottigliamento.

Il Giulio37 è un vino spumante di qualità Metodo Classico Dosaggio Zero della Marche IGT Bianco, creato attraverso un processo di vinificazione artigianale che presta particolare attenzione ai dettagli. Il processo inizia con la pressatura dei grappoli interi, effettuata nel minor tempo possibile per ottenere una resa di uva-mosto ridotta. Il mosto viene poi decantato e fermentato a temperatura controllata, con una parte del vino affinata in tonneaux e l’altra in acciaio.

Il processo di produzione prosegue con l’assemblaggio della cuvée, seguita dall’imbottigliamento. Il tiraggio avviene la primavera successiva alla vendemmia, quando la cuvée viene zuccherata e arricchita con lieviti per avviare la rifermentazione in bottiglia. Le bottiglie riposano in catasta per almeno 30 mesi sui propri lieviti, migliorando la complessità e la struttura del vino.

La sboccatura avviene successivamente, un processo che prevede l’eliminazione dei lieviti depositati sul collo della bottiglia attraverso il remuage, e il rimbocco con lo stesso vino, mantenendo il caratteristico dosaggio zero.

Il risultato finale è un vino spumante di alta qualità, con bollicine fini e persistenti. Il profilo aromatico complesso e la freschezza lo rendono ideale per celebrare momenti speciali o per essere gustato durante incontri conviviali.
